Welcome to the second Gun Barrel Steak and Game House, a family owned business which originated in Jackson Hole, Wyoming. The first restaurant opened in 1993 in what had formerly been the Wyoming Wildlife Museum and Taxidermy. The decor in both restaurants was inspired by the museums’ atmosphere and collection of unique artifacts and mounts. This second location opened in the summer of 2005 and incorporates aspects of scenic Utah into its structure and furnishings.
The restaurant in St. George contains many distinctive works of art and tributes to the western region. The wood trim and the table tops are made of trestlewood from the railroad that went around the Great Salt Lake. Hanging in the restaurant is a poster from the classic western film Butch Cassidy and the Sundance Kid signed by Paul Newman and Robert Redford, in addition to numerous historical artifacts and game mounts.
The Gun Barrel Steak and Game House name was taken from the small east Texas town of Gun Barrel City. The city’s first hand-painted sign from the 1950’s was given to us and still hangs in The Gun Barrel Steak and Game House in Wyoming. The original Gun Barrel contains many of the original mounts from the Museum as well as pieces of Western history, including Hank Williams Jr.s 1800’s buffalo coat that he wore on the Lone Wolf album. The restaurant also contains the largest barbed wire collection in the West and an antique gun collection featuring a .82 caliber rampart gun from India forged in the 1700’s.
One of the signatures of the Gun Barrel Steak and Game House restaurants is the open grill. Patrons are welcome to watch chefs cook a variety of meats on the grill where mesquite wood is used to create a flavorful and distinctive taste.

The Story of Xetava Gardens
Xetava (pronounced Zay – Tah – Vah) is a combination of the xeriscape (desert landscaping) and the lava fields that surround the area.
The original building was a gift shop with a coffee bar, just the upstairs and the lower area with the flagstone floor.
We purchased Xetava in 2006, and started with two toaster ovens upstairs on a shelf, a grill outside with a tent, and one part time employee.
In 2011, we purchased the space next to us, built a kitchen, and added a larger dining room.
The giant rock in the middle of the café is actually 11 rocks, brought in from the base of the red mountain. The wooden floors are from the Lucin Railroad Trestle in Salt Lake City.
The front doors, the cabinets, every pillar and cabinet door, the wooden pillars and wainscoting…all carved by hand.
Our philosophy on food is to serve you the food we would serve our daughter. We buy locally sourced, wild, and organic ingredients when feasible.
Feel free to pop in the kitchen and say thanks. They work really hard to make you a great meal.
If you love your experience here, tell a friend, or write a review on Google. If there is something you feel we can do better, email us – firstname.lastname@example.org.
We love what we do, and we value your input.
Thanks for making Xetava part of your day.
Sincerely, Rachel and Greg
